As mentioned in the victoria sandwich recipe, you can jazz them up with extra flavourings. For lemon use the same recipe as before and simply replace the vanilla extract with some lemon zest & a little squeeze of the juice.
The making & baking process is also the same.
To finish it off mix some mascarpone cheese & icing sugar together, liberally spread it on the bottom layer and then generously dollop some lemon curd on top, sandwich the cakes together and simply dust it with icing sugar.
Perfect with a cup of earl grey.
