BURGERS

This recipe is taken from Jamie Oliver’s Ministry of Food book – the idea behind the book is to teach anyone how to cook and then passing the knowledge on – so I’m sure he won’t mind me sharing the recipe with you.
Out of all the burger recipes I have tried, this made the tastiest burgers.

To make 6 average sized burgers, or 4 burgers fit for Elvis you’ll need:

12 Jacobs cream crackers
8 sprigs of flat leaf parsley
2 heaped teaspoons of Dijon mustard
500g good quality minced beef
1 large egg
Sea Salt & Black Pepper
Olive Oil

Jamie says to wrap your crackers in a clean tea towel and smash then up until fine – I cheated and used a food processor.
Put the crackers in a bowl with the finely chopped parsley (including the stalks), the mustard, minced beef, cracked egg & a good pinch of salt & pepper. Then with clean hands scrunch the mixture together and form into burger shapes. Drizzle the burgers with olive oil and to help them firm up, pop them into the fridge until you need them.

Preheat a large griddle or a frying pan for about 4 minutes on a high heat – then turn it down to medium and pop on the burgers, pressing them down with a spatula so it is in full contact with the heat – cook them to your liking for about 3 to 4 minutes each side. If you are adding cheese (why wouldn’t you be?) then pop a slice on top of each burger when they have about a minute left to go.

Serve them with whatever you fancy.
