As much as I love and adore Bananas, no matter how hard I try, I never manage to eat them all before they start to turn and I hate eating brown bananas – icky! The solution was always to make some banana bread but bored of that I decided to try making some muffins and these turned out AMAZING.
Banana & Walnut Muffins
2 large eggs
125ml vegetable oil
200g demerara sugar
½ tsp vanilla paste
250g plain flour
1 tsp baking powder
1 tsp bicarb of soda
½ tsp salt
1 tsp ground cinnamon
100g walnut pieces
50g dried banana + 12 full slices for topping
Preheat your oven to 180°c and prepare a 12 cup muffin tin with 12 paper cases.
Mix together the eggs, oil, sugar and vanilla paste, followed by the mashed up banana.
Then sift in the flour, baking powder, bicarb, cinnamon and salt and fold this gently into the mixture.
Break the walnut pieces and dried banana by hand and gently fold these in too.
Spoon the mixture into the cases up to just before the brim and top with a full slice of dried banana.
Bake for 20-25 minutes until risen and springy to touch.
For best results EAT warm.
