Chocolate Mint Victoria Sponge

This cake went down very with friends, the sponge is chocolatey and the butter cream is peppermint.

Use the same Victoria Sponge recipe as before but this time just replace 4 tablespoons of the flour with cocoa powder – I use the Green & Blacks  Organic stuff. Again the making & baking processes are the same.

For the Peppermint Cream, mix butter and icing sugar with a couple of splashes of peppermint essence.
